Stepping into Asoko's world is an unforgettable feeling. As soon as you enter, it takes you to a unique atmosphere. Asoko's story begins in October 2016, opening the first Japanese restaurant in Onda (Castellón).
The concept of this first restaurant, wants to bring the customer to a place with exquisite simplicity and a fusion of flavours in the purest Japanese style, offering high quality ingredients and the best raw material.

This concept is transferred to each of the next openings. Asoko Benicàssim opened in April 2018, followed by Asoko Vila-real in March 2019 and Asoko Puerto de Sagunto in June 2020. This latter opening marked an important step forward in the province of Valencia.

In March 2021, Asoko Vinaròs opens its doors, positioning itself in the north of the province of Castellón.
Finally, Asoko arrived in the provincial capitals of Castellón and Valencia, where the restaurant is now firmly settled and continues to evolve and expand.

Asoko is a Japanese and fusion cuisine restaurant, specialising in sushi, offering everything from traditional dishes to more innovative creations.

Asoko style beef noodles

Ingredients:

 

  • 120 g of noodles
  • 7 ml of olive oil
  • 15 g onion
  • 15 g carrot
  • 10 g red pepper
  • 10 g green pepper
  • 70 g beef
  • 50 ml teriyaki sauce
  • 5 g of chives

Elaboration:

The noodles in Asoko are made in the wok style, this name is due to the type of pan with

which are cooked. The wok pan is a traditional cookware in Southeast Asia. It is deep, bowl-shaped frying pan and has a diameter of about 30 cm.

Place the olive oil and let it heat for 2 to 3 minutes, add the vegetables cut into thin strips and sauté for about 2 or 3 min.

Add the beef and sauté again. Once we have it at the point, we add noodles or flat noodles and teriyaki sauce, let cook 2 min during which we stir the ingredients and then we can serve them.

Presentation:

Finally, we serve in one of the pieces of our Bass crockery, since the slight curvature at the base of this plate is perfect for this type of recipe. We give the last touch, decorating with chives.

Sea bass nigiri

Ingredients:

  • 15 g sea bass
  • 12 g rice
  • 6 g unagi sauce
  • 4 g foie pate flambeed

Elaboration:

 

Nigiri is one of the simplest and most traditional forms of sushi, its origin goes back to the 19th century, when a sushi chef began serving fish over rice to improve presentation and taste.

Our sea bass nigiri is made by moulding a ball of sushi rice and giving it an oval cylindrical shape exerting pressure with hands and compacting rice. Once we have the rice this way placed, we put the piece of fish on top, in this case we will put raw sea bass. We add a truffled unagi sauce and a topping of foie pate.

Presentation:

To taste these delicious snacks we have chosen to place them on a small acacia wood cutting table. A perfect way to serve this dish individually. However, we understand that some prefer a more traditional presentation. In that case, we recommend serving the nigiri on a small ceramic tray.

Special spicy tuna Balfegó

Ingredients:

  • 80 g bluefin tuna Balfegó
  • 30 g orange
  • 20 g avocado
  • 3 g of chives
  • 10 g rice
  • 0,5 und seaweed
  • 7 g black truffle pate

For macerate 3gr/und: shichimi (Japanese spices), miso sauce, oil sesame, salty soya and olive oil.

Elaboration:

 

For this roll we will need rice, specially prepared for sushi, and half seaweed such as for the preparation of traditional makis, in this way we will obtain 10 pieces.

 

For the interior:

Adjust the cut of bluefin tuna with the measure of the seaweed and macerate half tuna in a bowl with the indicated ingredients.

While we are macerating the tuna, we can prepare the orange segments which will give it that touch at once crispy and refreshing. Make sure to remove all the peel and the albedo (the white part) because it could sour.

Once we have the segments well cleaned, it is advisable to dry them on an absorbent paper, the type we usually have in the kitchen, so we remove the excess juice from the manipulation.

We assemble the roll with rice, seaweed, and orange segments; we add avocado, the tuna we have macerated, and we close the roll.

 

For the outside we cut thin sheets of Balfegó Bluefin Tuna and cover the roll with rice.

Presentation:

Cut into 10 pieces and place it vertically and slightly transverse to the plate.

Finally, we add at the top of each piece a dot of black truffle pate and a pinch of truffle oil. Garnish them with chives.
